What could I prepare with potatoes, green beans and eggs…?
Oh yes, a yummy rural & traditional recipe! It’s basic, but you know basics are the best.
SERVES 4 PEOPLE

INGREDIENTS:
1 lb 8 oz green beans
4 potatoes
water
coarse salt to taste
1 tablespoon onion, chopped
3 tablespoons extra virgin olive oil
3 eggs
3 tablespoons Parmesan cheese
Salt to taste
Marjoram to taste
2 tablespoons breadcrumbs
3-4 tablespoons extra virgin olive oil
STEP 1: BOIL PATATO AND GREEN BEANS
Boil potatoes in salted water,
then peel and mash them.
Wash and remove the ends from the green beans.
Boil green beans in salted hot water,
then drain them and mince coarsely.
STEP 2: SAUTÉ THE VEGETABLE
In a skillet sauté onion into oil, add potatoes and green beans and cook for about 5 minutes.
STEP 3: ADD THE OTHER INGREDIENTS
In a bowl, beat the eggs together with Parmesan cheese, salt and marjoram.
Then add potatoes, green beans and breadcrumbs.
STEP 4: COOK THE OMELETTE
In the same skillet of step 2, place oil. When hot, pour the mixture previously prepared mashing with a fork so that it distributes evenly in the pan.
Cover with a lid and cook the omelet for 30 minutes turning over a couple of times.
