There’s something new on the table! Not common gnocchi, made of potatoes, but a delicious Ricotta cheese variation with sausage and spinach!
SERVES 3-4 PEOPLE

INGREDIENTS
1 lb Ricotta cheese
6 oz all-purpose flour
5 tablespoons Parmesan cheese
2 eggs
Salt to taste
2 sausages
2 tablespoons extra virgin olive oil
1 teaspoon onion, chopped
2-3 frozen spinach cubes
water to taste
Water and coarse salt to taste
1 tablespoon Parmesan cheese
STEP 1: MAKE GNOCCHI
In a bowl mix together: Ricotta cheese, all-purpose flour, Parmesan cheese, eggs and salt.Take very small amounts of dough and make them round to get small gnocchi.
STEP 2: MAKE THE SAUCE
Remove the sausage skin, then chop them. Place the meat in a pan with oil and onion, and let cook for a couple of minutes. Add spinach cubes (still frozen) and cook for about 10 minutes, adding salt and 2-3 tablespoons water.
STEP 3: COOK GNOCCHI
Cook gnocchi in boiling salted water, until they float to the top.
STEP 4: ADD THE SAUCE
Drain gnocchi and place them in the sauce pan, adding a tablespoon Parmesan cheese.
