Ham stuffed pistachio nut cookies

One of the most traditional Italian cookies is “Bacio di Dama” that is “Lady kiss”, made of hazelnuts and cocoa. This is a savory version with ham mousse and pistachio nuts, very tasty and ideal for your homemade appetizert time!

INGREDIENTS

1 cup all-purpose flour

3 oz butter (cold!)

2 oz pistachio nuts powder

3 tablespoons Parmesan cheese

2 tablespoons white wine , dry

Salt to taste

 

Pistachio nuts crumbs to taste

 

5 slices ham

4 oz fresh cheese (I used Robiola cheese)

1 tablespoon fresh cream

Salt and peper to taste

 

 

STEP 1:MAKE THE DOUGH

Place into the mixer bowl the first 5 ingredients and turn in on for 3 minutes.

 

STEP 2: KNEAD BY HAND

Place the mixture on a pastry board and knead it by hand until you get a ball. Then wrapp it in clingfilm and place it into the fridge for 30 minutes.

 

STEP 3: SHAPE THE COOKIES

Remove the dough from the fridge and divide it into 20-25 pieces. Make each piece round by hand and cover it with pistachio nuts crumbs. Now cut each little ball into two pieces.

 

STEP 4: COOK THE COOKIES

Place the cookies on a baking paper sheet and cook them in preheated oven at 170°C for 16/17 minutes.

 

STEP 5: MAKE THE HAM MOUSSE

Place into the mixer bowl: ham and fresh cheese and mix for a couple of minutes. Place the mouse in another bowl and add crema, salt and pepper. Beat well.

 

STEP 6: ASSEMBLE THE COOKIES

Fill half cookies with the ham mousse and cover them with the others cookies.
