Malfatti, strangolapreti, gnocchi verdi.. these are some of the names of this traditional Italian recipe. Here you’ll find a way to cook them in only four easy steps, and I promise you : they’re delish! Anyway there’s a recommendation on this: be generous with melted butter that’s the traditional way to do it!
SERVES 4 PEOPLE

11 oz spinach
water to taste
1 teaspoon (or less) butter
9 oz Ricotta cheese
2 tablespoons all-purpose flour
3 tablespoons Grana or Parmesan cheese
5tablespoons breadcrumbs
1 egg
Salt and nutmeg to taste
Water and coarse salt to taste
3-4 tablespoons Grana or Parmesan cheese
Butter (ample!)
STEP 1: COOK THE SPINACH
Boil spinach in water for 12-15 minutes, then drain, squeeze and then cook them in a pan with butter for a couple of minutes. Save till cold.
STEP 2: ADD THE OTHER INGREDIENTS
Place cold spinach in a bowl and add: Ricotta cheese, all-purpose flour, Grana cheese, breadcrumbs, egg, salt and nutmeg. Stir well with a fork.
STEP 3: COOK THE GNOCCHI
Place spoonfull of mixture into boiling salted water and let them cook for about 3-4 minutes.
Now drain them, place them in a dish and sprinkle with Grana cheese.
STEP 4: MELT THE BUTTER
Melt the butter in a little pot and when golden, pour it on gnocchi.
