In my family zucchini is the most cooked vegetable, but this is the way I like it most. Thanks to eggs, zucchini get very very soft and tasty. The recipe is so easy that belive me: you can’t wait to try it.

INGREDIENTS
5-6 zucchini
3 tablespoons extra virgin olive oil
1 teaspoon onion, chopped
salt to taste
2 eggs
salt to taste
STEP 1: CUT ZUCCHINI
Cut zucchini in a half, them slice them.
STEP 2: COOK THE ZUCCHINI
In a skillet sautè the onion. Add the zucchini, the salt and cook for 15 minutes covered with a lid.
STEP 3: ADD THE EGGS
Add the eggs to the pan, mix them with zucchini and add a pinch salt. Cook for 3-4 more minutes.
