It’s February but because of the sunny day (or because of my never-ending hunger) I feel like something Mediterrean- flavoured… Here is the solution: tuna and cheese filled bites, very very soft and fried. Actually: one of my masterpieces!
MAKES 40 BITES

INGREDIENTS
¾ cup lukewarm water
½ oz yeast
1 oz sugar
1 lb all- purpose flour
2 oz lard
2 pinches salt
1 mozzarella, cubed
2 tablespoons cheese, cubed
1 tuna can
4-5 sun-dried tomatoes, chopped
10-15 olives, chopped
1 teaspoon parsley
Salt and oregano to taste.
STEP 1: MAKE THE DOUGH
In a bowl, dissolve yeast into water and add the remaining ingredients in the order listed in the recipe (block 1). Knead vigorously. Cover the dough with plastic wrap and let it rise at room temperature for at least a couple of hours (if you exceed 6 hours put it to rise in the refrigerator, and axtract it one hour before using).
STEP 2: PREPARE THE FILLING
In a bowl mix together: mozzarella, cheese, tuna, sun-dried tomatoes, olives, parsley, salt and oregano.
STEP 4: FORM AND FILL THE BITES
Roll out the dough on a pastry board approx 5 mm thin with using the rolling pin.
With a dough cutter (or a small bowl), of approx diameter discs 8-10 cm, cut some circle. Put a teaspoon of stuffing on half of the circle, then close with the remaining half so as to form a half-moon.
Press the outer contour of the bites (the outer semi-circle) to make sure that the filling won’t come out while cooking.
STEP 4: COOK THE BITES
Fry the bites into hot oil for 2-3 minutes. When golden they’re ready!
