INGREDIENTS
2 o 3 cubes frozen spinach
2 cups water
1 chicken breast
1 teaspoon chopped onion
1 egg
6 tablespoons breadcrumbs
2 tablespoons Parmesan cheese
Salt and pepper to taste
Cubed cheese to taste
3 tablespoons all-purpose flour
½ glass milk
1 egg
1 tablespoon olive oil
Salt to taste
1 cup breadcrumbs
1 tablespoon corn flour
Frying oil to taste
STEP 1: BOIL THE SPINACH
Boil spinach in hot water for about 6-8 minuti; then drain them sqeeze them and put them aside.
STEP 2: MKE THE MIXTURE
Finely chop spinach, chicken and onion in a mixer. Place the mixture in a bowl and add: egg, breadcrumbs, Parmesan cheese, salt and pepper.
STEP 3: SHAPE THE BITES
With wet hands, take a teaspoon of mixture and place a cheese cube in the centre, then make a ball. Do the same with the remaining mixture.
STEP 4: DIP INTO THE BATTER
In a separate bowl, whisk flour with the milk, egg, oil and salt. Immerse the bites into the batter and consequently in the breadcrumbs + cornflour mixture.
STEP 5: FRY
In a deep oil frying pan, cook the bites until getting golden and crunchy.
A PIECE OF ADVICE: if you prefer you can also cook the bites in oven: brush parchment paper with oil, then place the bites on it and sprinkle with some other oil. Cook in preheated oven a 200°C for 20 minutes.
