A great way to “recover” hospital-style chicken and turn it into a real delicacy!
MAKES 25 CROQUETTES
READY IN 15′
INGREDIENTS:
2 or 3 drumsticks, boiled
1 carrot
2 potatoes
1 egg
2 tablespoons Parmigiano cheese (or similar)
1 tablespoon breadcrumbs
Salt and pepper to taste
Milk and breadcrumbs (if necessary).
2 tablespoons all-purpose flour
1 egg
1 cup breadcrumbs
Frying oil to taste
STEP 1: DEBONE THE CHICKEN
Using your hands, separe the meat and the bones, then place the meat in a bowl.
STEP 2: COOK VEGETABLES
Boil or steam carrot and potatoes until soft.
STEP 3: PREPARE THE MIXTURE
Blend vegetables + chicken
Place the mixture in a bowl and add: egg, Parmesan cheese, breadcrumbs, salt and pepper to taste.
If the mixture seems to be too dry add a bit of milk, if instead it’s too wet add a bit of breadcrumbs.
STEP 4: BREAD THE CROQUETTES
Place in 3 different dishes: 2 tablespoons all-purpose flour, 1 beaten egg and 1 cup breadcrumbs. Take a little of mixture and make it round, then dip each croquette in the flour, then coat in the egg before dipping in the breadcrumbs.
STEP 5: THE COOK THE CROQUETTES
Fry the croquettes in a pan with deep hot oil turning them several times until completely cooked (about 3 minutes).
