MAKES 12 MUFFINS

INGREDIENTS
1 egg
½ cup vegetable oil
5 oz sugar
5 oz all-purpose flour
1 teaspoon baking powder
2 tablespoons lemon juice
2 tablespoons milk
3 tablespoons lemon juice
2 tablespoons sugar
STEP 1: PREPARE THE DOUGH
In a bowl combine the first 7 ingredients of the recipe and mix carefully with a mixer.
STEP 2: FILL THE CUPS AND BAKE
Line a muffin mold with 12 cups. Fill each cup ¾ full and cook the muffins for about 10-12 minutes in preheated oven at 180° C.
STEP 3: MAKE THE LEMON SAUCE AND FILL THE MUFFINS
Mix together 2 tablespoons sugar and 3 tablespoons lemon juice, stirring well. Using a pastry syringe, fill each hot muffin with the lemon sauce.
