Soft croquettes with tuna and zucchini

You know during #summertime #vegetablegarden in full of #zucchini🥒🥒🥒, but… You have no more ideas about how to cook them!!!! 😱Isn’t that true?

Don’t worry: I’m coming to help you with an amazing recipe😻: fragrant #croquettes with zucchini and #tuna 🐟!

Few ingredients (and I know you already have the in the pantry/fridge), to make the all #family smile 😀😀

Dinner will be a success: try them now!

MAKES 15 CROQUETTES
READY IN 40’

 

INGREDIENTS:

½  glass milk

3 slices bread (about 2,5 oz)

 

2 tablespoons extra virgin olive oil

1 teaspoon onion, chopped

2 zucchini, cubed

Salt to taste

 

3 cans tuna (about 5 oz)

1 egg

2 tablespoons potato flakes

3-4 tablespoons breadcrumbs

2 tablespoons Parmesan cheese

Salt and pepper to taste

 

Breadcrumbs to taste

 

Extra virgin olive oil to taste

 

 

STEP 1:COMBINE BREAD AND MILK

Place the bread slices in a bowl and cover them with milk. Let them soften.

 

STEP 2 : COOK THE ZUCCHINI

In a skillet sauté the onion and oil. Add the zucchini and a pinch of salt and cook over a medium heat for about 10 minutes.

 

STEP 3: MIX THE INGREDIENTS

Transfer the zucchini in a bowl and mix them with tuna,  bread (both drained), egg, potato flakes, breadcrumbs, Parmesan cheese, salt and pepper.

 

STEP 4: MAKE THE CROQUETTES

Take a little of mixture and make it flat, than dip each croquette in breadcrumbs.

 

STEP 4: COOK

Sprinkle a baking paper with oil and place the croquettes on it. Cook them in preheated oven at 200°C for 20 minutes turning them halfway through.
