Radicchio (Chicory) and ricotta cheese pie

SERVES 4 PEOPLE
READY IN 30 ‘(10 preparation, 20 cooking)

 

INGREDIENTS

1 radicchio, chopped

1 tablespoon extra-virgin olive oil

1 teaspoon onion, chopped

Red wine to taste

Salt to taste

 

11 oz ricotta cheese

3 tablespoons Parmesan or Grana cheese

Salt and Pepper to taste

 

1 roll puff pastry

 

 

STEP 1: COOK THE RADICCHIO

Place the radicchio in a skillet with  oil and onion. Simmer with wine until reduced. Continue cooking for 5 minutes, adding a couple of tablespoons of water and finally add salt.

 

STEP 2: PREPARE THE FILLING

In a bowl, mix the ricotta and Parmesan cheese (or grana cheese), then add the radicchio, salt and pepper to taste.

 

STEP 3: MAKE THE PIE

Cover a circular baking pan with the puff pastry, then add the filling and level it.

 

STEP 4: COOK THE PIE

Cook for 20-25 minutes in preheated oven at 200 °C.
