MAKES 10 SANDWICHES

INGREDIENTS
½ cup all-purpose flour
½ cup potato starch
1 teaspoon baking powder
3 eggs
A pinch cream of tartar
2 tablespoons warm water
3 oz sugar
1 packet vanilla
1 tablespoon butter, melted
Sugar to taste
8 oz mascarpone cheese
½ cup double cream
4 oz powdered sugar
Vanilla to taste
10-12 strawberries, cubed
powdered sugar to taste
STEP 1: MIX THE DRY INGREDIENTS
Mix the dry ingredients (all-purpose flour, potato starch and baking powder) in a bowl.
STEP 2:MAKE THE DOUGH
Separate the egg yolks from the egg whites by placing them into two other different bowls.
– EGG WHITES BOWL: add a pinch of cream of tartar and, using an electric beater, beat the egg whites until stiff. (about 10 minutes).
– YOLKS BOWL: blend the yolks together with 2 tablespoons hot water, then add sugar and vanilla little by little.
STEP 3: COMBINE THE INGREDIENTS
Add the stiff egg whites to the yolks bowl, mixing thoroughly. Then add the dry ingredients previously prepared (step 1).
STEP 4: BAKE THE CAKE
Pour the dough in a baking tray (covered with greaseproof paper) mashing with a fork so that it distributes evenly in the baking tray. Cook for 14 minutes in preheated oven at 180°. After that transfer it on a dishrag covered with sugar and let it cool.
STEP 5:MAKE THE MASCARPONE CHEESE CREAM
Place the mascarpone cheese, the double cream, the powder sugar and vanilla in a bowl and blend for 5-7 minutes with an electric beater. Add strawberries and mix thoroughly.
STEP 6: FILL THE SANDWICHES
Cut the cake halfway to create two equal rectangles. Spread one of them with the mascarpone and strawberries cream and cover it with the other rectangular cake. Use a good knife to cut the cake into squares and then into triangles. Finally sprinkle each sandwich with powdered sugar.
