MAKES 1 LOAF
READY IN 4h 15’ (4 h is resting time!)
INGREDIENTS
1 small piece yeast (about ½ oz)
1 cup lukewarm water
3 tablespoons extra virgin olive oil
½ cup lukewarm milk
1 teaspoon sugar
3 cups all-purpose flour
3 teaspoons salt
Butter to taste (for the bread pan)
Milk to taste
STEP 1: MIX WET INGREDIENTS
Place the yeast, the water, the oil and the milk in a bowl. Mix thoroughly.
STEP 2: ADD DRY INGREDIENTS
Add the sugar and 1 cup all-purpose flour mixing with a fork, then the salt and the remaining flour.
STEP 3: KNEED BY HAND
Kneed the dough until elastic.
STEP 4: FIRST RISE
Rest the ball of dough for two hours (or much more!), covered with cling film.
STEP 5: SHAPE THE DOUGH
Roll the dough out into a rectangle, then roll it up and tuck the ends under.
STEP 6: SECOND RISE
Place the dough into a greased bread pan, sprinkle the top with a little milk and let it rise for two hours.
STEP 7: BAKE THE BREAD
Cook the bread for 30 minutes in preheated oven at 180°C.
A piece of advice: step 4: I usually store the dough in the fridge all night long!
