SERVES 4 PEOPLE
READY IN 15 ‘(5’ preparation, 10’ cooking)
INGREDIENTS
12 slices pork loin
1 or 2 tablespoons gluten-free (or all- purpose) flour
1 teaspoon onion, chopped
1 tablespoon butter
1 tablespoon extra-virgin olive oil
½ glass white wine or Prosecco
Salt and pepper to taste
12 slices speck
2 tablespoons Parmesan cheese
STEP 1: PREPARE THE MEAT
Beat the pork thin as desired with a meat mallet (I like pretty thin). Flour the slices.
STEP 2: COOK THE ESCALOPES
Sauté the onion in the butter and the oil, then add the meat and let it brown on both sides.
Simmer with white wine until reduced, add salt and pepper and let it cook for 5 minutes over medium heat.
Just before turning off, place on each escalope a slice of speck and a handful grated Parmesan cheese.
Cover the pan with a lid for a few minutes (the time required for the Parmesan cheese to melts) and serve.
