INGREDIENTS
4 tablespoons extra virgin olive oil
1 teaspoon onion, chopped
1 garlic clove
1 tablespoon parsley, chopped
4 artichokes
4 cups broad beans
1 cup beans
1 cup hot water
Vegetable stock powder to taste
3 potatoes, cubed
1 cup hot water
STEP 1: SAUTE ONION AND GARLIC
In a skillet sautè the onion and the garlic with parsley and oil.
STEP 2: ADD THE VEGETABLES
Add artichokes (cut into slices), the broad beans, the beans, the water and vegetable stock powder to taste. Let them cook over slow heat.
STEP 3:ADD THE POTATOES
After 20 minutes add the potatoes and the second cup of hot water. Let it cook for other 20 minutes.
