Zucchini and carrot pie

SERVES 4 PEOPLE
READY IN 35 ‘(10 preparation, 25 cooking)

 

INGREDIENTS

11 oz ricotta cheese

3 tablespoons Parmesan or Grana cheese

1 egg

Salt and Pepper to taste

 

2 zucchini

2 carrots

 

1 roll shortcrust pastry

 

 

STEP 1: PREPARE THE FILLING

In a bowl, mix the ricotta, the Parmesan cheese (or Grana cheese) and the egg. Then add salt and pepper to taste.

 

STEP 2: CUT VEGETABLES

Cut thin slices of carrots and zucchini using a potato peeler.

 

STEP 3: MAKE THE PIE

Cover a circular baking pan with the shortcrust pastry, add the filling and level it.

Place the vegetable slices into the filling in circle.

 

STEP 4: COOK THE PIE

Cook for 20-25 minutes in preheated oven at 200 °C.
