Carpaccio rolls with fresh cheese

SERVES 4 PEOPLE

INGREDIENTS

1 cup Robiola cheese (fresh cheese)

Salt and pepper to taste

 

16 slices beef carpaccio

 

2 tablespoons extra virgin olive oil

Salt to taste

4-5 drops lemon juice

 

 

STEP 1: MAKE THE FILLING

In a bowl mix the Robiola cheese until soft, then add salt and pepper to taste.

 

STEP 2: MAKE THE ROLLS

Lay the rolls flat, then in the centre of each, place a teaspoon Robiola cheese. Roll up the  slices.

 

STEP 3: SEASON

In a bowl mix the oil, salt and lemon juice. Sprinkle the rolls with the dressing.
