Crispy pancakes

MAKES 15 CRISPY PANCAKES
READY IN 1 h

 

INGREDIENTS

1 cup milk

2 oz butter

7 ox all-purpose flour

2-3 pinches salt

 

½ glass béchamel

1 mozzarella, cubed

1 tablespoon Parmesan cheese

3 slices ham, sliced

Salt and pepper to taste

 

all-purpose flour  to taste

water to taste

 

1 egg yolk + 2 tablespoons water + salt to taste

1 cup breadcrumbs + 2 tablespoons cornmeal

 

Extra virgin olive oil to taste

 

 

STEP 1: KNEAD

Boil the milk together with butter, then add all-purpose flour  and salt and mix well.

When cold knead it by hand until smooth.

 

STEP 2: REST

Rest the ball of dough for 30 minutes at room temperature, covered by a towel.

 

STEP 3:  MAKE THE FILLING

In a bowl combine: béchamel, mozzarella, Parmesan cheese, ham, pepper and salt to taste.

 

STEP 4: FILL THE CRISPY PANCAKES

On floured surface, start rolling the dough using a rolling pin. Cut about 15 circles (diameter 10 cm) and place in the centre a teaspoon of filling. Wet the perimeter of each circle with a bit of water, then close it well with a fork (you’ll get a half moon shape).

 

STEP 5: BREAD THE CRISPY PANCAKES

Deep the crispy pancakes into the egg yolk + water + salt mixture and then into breadcreumbs + cornmeal mix.

 

STEP 6: BAKE

Sprinkle a baking paper with oil and place the crispy pancakes on it. Cook them in preheated oven at 200°C for 15 minutes turning them halfway through.
