INGREDIENTS
4 eggs
2 tablespoons Parmesan cheese
1 teaspoon parsley, chopped
Salt and pepper to taste
2 tablespoons sunflower oil
1 stick butter
7 oz fresh cheese
3 oz ham
Rocket to taste
STEP 1: MIX THE INGREDIENTS
In a mixing bowl whisk the eggs, the Parmesan cheese, the parsley, salt and pepper.
STEP 2: COOK THE OMELETTE
In a skillet, melt the butter into the hot oil, then pour the mixture of eggs mashing with a fork so that it distributes evenly in the pan. Cover with a lid and cook the omelet turning over a couple of times for about 7-8 minutes.
STEP 3: FILL THE OMELETTE
Spread the fresh cheese on the omelette, then cover with ham and finally with rocket.
Roll the omelette up using a piece of clingfilm to close it.
STEP 4: PUT THE OMELETTE IN THE FRIDGE
Put the omelette roll in the fridge (at least for 1 hour), then slice it and serve.
A PIECE OF ADVICE: it’s better to use a large skillet to get a thinner omelette (easier to fill and roll too)
