Ricotta cheese gnocchi

SERVES 4 PEOPLE

INGREDIENTS

17 oz Ricotta cheese
2 eggs

6 oz all-purpose flour
5 tablespoons Parmesan cheese

1 pinch salt
2 sticks butter

 

Water and coarse salt to taste

 

2-3 tablespoons Parmesan cheese

 

STEP 1: MAKE THE MIXTURE

In a bowl mix together: Ricotta cheese, eggs, all-purpose flour , Parmesan cheese and salt.

 

STEP 2: MELT BUTTER

Melt butter on the stove-top in a heavy saucepan over medium-low or medium heat. Then remove it from the heat when it’s golden.

 

STEP 2: COOK THE GNOCCHI

Place spoons of gnocchi in boiling salted water (the correct ratio provides 1 liter of water per pound of pasta and 12 g of salt per liter of water), and cook them till they float to the top.

Drain them.

 

STEP 4: COVER WITH CHEESE AND BUTTER

Cover gnocchi with Parmesan cheese and melted butter.
