So soft, they’re my friend Fede favorites!
Every time we go to his place in the mountains, he cooks potato polenta and i prepare this specialty… Recommended!
MAKES 10 MEATBALLS
READY IN 1h
INGREDIENTS:
1 lb ground meat (pork + beef)
1 egg
4 tablespoons Parmesan cheese
4 tablespoons breadcrumbs
1 teaspoon parsley, chopped
Salt, pepper, nutmeg to taste
All-purpose flour to taste q.b.
3 tablespoons extra virgin olive oil
1 tablespoon butter
2 sage leaves
¼ glass white wine, dry
1 glass tomato sauce
1 cup hot water
Salt to taste
STEP 1: MIX THE INGREDIENTS
In a large bowl combine the ground meat, the egg, breadcrumbs, Parmesan cheese and parsley. Add salt, pepper and nutmeg.
Knead by hand until uniform.
STEP 2: MAKE THE MEATBALLS
Take a little of mixture and make it round, then flour it. Do the same with all the meatballs.
STEP 3: COOK THE MEATBALLS
In a large frying pan, place sage, butter and xtra virgin olive oil. Sauté for a few minutes adding the meatballs (about 5′).
Simmer with white wine until reduced, then cook them on low heat for about 45 minutes adding 1 or 2 cups hot water, tomato sauce and salt to taste.
