Fried panzerotti pizza

40 PIECES DOSE
READY IN 2h 33 ‘(30’ preparation, 2 h rest, 3 ‘baking)

 

INGREDIENTS:

¾ cup lukewarm water

½ oz yeast

1 oz sugar

1 lb all- purpose flour

2 oz lard

2 pinches salt

 

2 mozzarella, cubed

1 h, ham, cut into strips

½ cup tomato sauce

dried oregano, salt and extra virgin olive oil to taste

 

 

STEP 1: MAKE THE DOUGH

In a bowl, dissolve yeast into water and add the remaining ingredients in the order listed in the recipe (block 1). Knead vigorously.

 

STEP 2: PROVING

Cover the dough with plastic wrap and let it rise at room temperature for at least a couple of hours (if you exceed 6 hours put it to rise in the refrigerator, and axtract it  one hour before using).

 

STEP 3: PREPARE THE FILLING

In a bowl mix together: mozzarella, ham, tomato sauce, oregano, salt and a little oil.

 

STEP 4: FORM AND FILL THE PANZEROTTI

Roll out the dough on a pastry board approx 5 mm thick with using the rolling pin.

With a dough cutter (or a small bowl), of approx diameter discs 8-10 cm, cut some circle. Put a teaspoon of stuffing on half of the circle, then close with the remaining half so as to form a half-moon.

Press the outer contour of the panzerotti (the outer semi-circle) to make sure that the filling won’t come out during cooking.

 

STEP 5: COOK THE PANZEROTTI

Fry the panzerotti into hot oil for  2-3 minutes. When golden the’re ready!
