The most unfortunate encounters? those with fish bones! I really love fish soup! But… when I’m at the restaurant and I find them in my dish I get angry and not hungry!
Read below my recipe for a delicious homemade fish soup, of course without fish bones!
SERVES 4 PEOPLE

INGREDIENTS
1 tablespoon onion, chopped
4 tablespoons extra virgin olive oil
About 30 mussels
White wine to taste
Parsley to taste
6 shrimps
1 tablespoon butter
2 tablespoons extra virgin olive oil
½ glass white wine
3-4 big cuttlefish, clean
4 calamari (little cuttlefish), clean
1teaspoon onion, chopped
3 tablespoons extra virgin olive oil
White wine to taste
4 slices monkfish
1 can cherry tomatoes
Chilli, pepper and salt to taste
Parslet to taste
STEP 1: COOK THE MUSSELS
Place onion and oil in a large pot and let them sautè. Add mussels and cook for 2-3 minutes at strong heat with a lid. Simmer with wine and add parsley. Cook for two more minutes, then turn off.
Now divide the ingredients in two bowls:
- In the first one place the mussles and peel them;
- In the second one place the coking liquid and filter.
STEP 2: COOK THE SHRIMPS
Peel and devein shrimps. To get a tasty sauce you need to cook shrimp“fish waste”.
Use the step 1 pan and place in it butter and oil. Add fish waste and cook it by pressing with a wooden spoon for a couple of minutes. Simmer with white wine , then filter the sauce and add it at the mussels liquid prepared on step 1.
STEP 3: CUT FISH
Cut cuttlefish in a half and slice calamari.
STEP 3:COMBINE FISH AND LIQUID
Different fish has different cooking time, so please follow the order indicated to add it to the pan:
- Cuttlefish: (use the same pot) sautè onion in oil, add cuttlefish and brown for 3-4 minutes, then simmer with wine. When reduced, add 1 glass mussels + shrimps liquid and cook for 15 minutes.
- Monkfish: Add monkfish slices to the pan, let them brown and add cherry tomatoes and ½ glass mussels + shrimpos liquid. Cook for other 10 minutes.
- Calamari: add calamari to the pan, then chilli, pepper and salt and mix carefully. Cook for other 5 minutes.
- Shrimps and mussels: Finally add shrimps and mussels, cook for 1 minute and add parsley!
A PIECE OF ADVICE: Toasted bread is a must with fish soup! In Italy we love our bread-dipping!
