Are you looking for something healthy but tasty at the same time? I’ve got just what you need! Here my mother’s chard omelette recipe: the only way she invented to make me eat vegetables when I was a child…
SERVES 4 PEOPLE
READY IN 30’
INGREDIENTS
1 deck of chard
2 tablespoons extra virgin olive oil
1 tablespoon onion, chopped
Salt to taste
½ glass water
2 eggs
Salt and pepper to taste
Marjoram to taste
2 tablespoons Parmesan cheese
1 bun dippend in milk
2 tablespoons extra virgin olive oil
STEP 1: CUT THE CHARD
Wash the chard, remove the white part and cut finely the leaves.
STEP 2: COOK THE CHARD
Place oil and onion in a pan and let sautè. Add the chard, salt and water and let cook covered with a lid for about 15 minutes.
STEP 3: ADD THE OTHER INGREDIENTS
In a bowl beat the eggs, then add salt, pepper, marjoram and Parmesan cheese. Finally add the bun (squizzed) and the chard. Mix well with a fork.
STEP 4: COOK
Using the pan where you cooked the chard at step 2, warm the oil. Pour the mixture of eggs and chard mashing with a fork so that it distributes evenly in the pan. Cover with a lid and cook the omelet turning over a couple of times for about 12 minutes.
