Stuffed rolls

Meatballs? already done! Croquettes? already done! mmm… Oh, no! I didin’t post my favourite ones: Stuffed rolls! I have to rectify that situation, immediately! Here’s my beloved meat recipe: so tender, so tasty that you can’t resist!

 

MAKES 12 ROLLS
READY IN 1h

 

INGREDIENTS

1 lb ground  meat (pork + beef)

1 egg

4 tablespoons Parmesan cheese

4 tablespoons breadcrumbs

1 teaspoon parsley, chopped

Salt, pepper, nutmeg to taste

 

12 thin sliced sirloin steaks

all-purpose flour to taste

 

3 tablespoons extra virgin olive oil

1 tablespoon butter

2 tablespoons carrot, onion, cdlery, chopped

 

½ glass white wine, dry

1 – 2 cups hot water

Salt to taste

 

 

STEP 1: MAKE THE FILLING

In a large bowl combine the ground meat, the egg, breadcrumbs, Parmesan cheese and parsley. Add salt, pepper and nutmeg.  Knead by hand until uniform.

 

STEP 1: STUFF THE ROLLS

Take a little of mixture and make it cylinder-shaped (like a salami) by hand, then wrap it in a sirloin slice and fix it with toothpicks. Sprinkle each roll with all-purpose flour.

 

STEP 2: MAKE THE SAUTè

In a pan, let sautè vegetables in oil and butter until golden.

 

STEP 3: COOK THE ROLLS

Add the rolls to the pan, simmer with white wine until reduced, then cook  on low heat for about 45 minutes adding 1 or 2 cups hot water and salt to taste.

 

A PIECE OF ADICE: If the filling is too much you can transfor it into meatballs and cook them together with the rolls.
