Vegetables mix (gratin)

Often we don’t consider side dish as an important course, but sure it is!  Here my colorful, healthy and gratin vegetable mix, so easy to prepare.

 

SERVES 4 PEOPLE
READY IN 40’

 

2 potatoes

2 carrots

 

1 aubergine

2 zucchini

1-2 tomatoes

 

2 tablespoons extra virgin olive oil

Salt to taste

 

2 tablespoons breadcrumbs+ 1 tablespoons Parmesan cheese

Extra virgin olive oil to taste

 

 

STEP 1: PEEL AND CUT

Peel potatoes and carrots, then slice them ½ cm thin. Boil them in water for 5-6 minutes, then drain and save them.

 

STEP 2: SLICE

Slice the aubergine, zucchini and tomatoes ½ cm thin.

 

STEP 3: SEASON

Place all vegetables in a bowl and season with oil and salt.

 

STEP 4: PLACE VEGETABLES INTO THE BAKING TIN

Place vegetables in a round baking tin, sprinkle with breadcrumbs + Parmesan cheese mix an oil.

 

STEP 5: COOK

Cook vegetables in preheated oven at 200°C for about 30 minutes.
