It’s the queen of my Sunday’s dinner. If you make it at home it has more taste! Piadina is a traditional recipe of Emilia Romagna, it’s easy and genuine like the peopople who live there. You can fill it with everything: I suggest you soft cheese,and vegetables, yum!
MAKES 4 PIADINA

INGREDIENTS
2 oz lukewarm water
2 oz lukewarm milk
1/4 oz salt
2 oz fat
7 oz all-purpose flour
3/4 oz all-purpose flour
all-purpose flour to taste
1 lb soft cheese (Squacquerone cheese)
5 oz rocket salad
STEP 1: WHISK THE INGREDIENTS
In a bowl whisk: water, milk, salt and fat. Finally add all-purpose flour.
STEP 2: KNEAD AND REST
Place the mixture on a pastry board and knead it by hand adding the remaining all-purpose flour until you get a smooth dough. Put some flour on the top, wrap the dough in cling film and let it rest at room temperature for 20 minutes.
STEP 4: DIVIDE IT
Cut the dough into 4 pieces and make them round by hand. Place the 4 balls in a ziploc bag for 1 hour.
STEP 5: ROLL OUT AND COOK
Using a rolling pin, roll each ball out to get a circle. Place the piadina in a hot non-stick pan and cook it for 2 minutes, then overturn and cook it on the other side.
Now fill the piadina with your favourite ingrediets: I like Squacquerone cheese and rocket salad!
