This time I thought of those who are ready for the summer holidays (where I live it seems to be winter…) and want to keep fit! Here is a tasty recipe to make soft and healthy baked nuggets!
SERVES 3-4 PEOPLE

INGREDIENTS
2 o 3 frozen spinach cubes
1 carrot
1 chicken breast, medium
1 teaspoon onion, chopped
1 egg
4 tablespoons breadcrumbs
2 tablespoons Parmesan cheese
Salt and pepper to taste
Breadcrumbs to taste
Extra virgin olive oil to taste
STEP 1: BOIL THE VEGETABLES
Peel the carrot and cut it into small cubes. Place it in a pan together with spinach in hot water and cook for about 10 minutes. Now drain vegetables and save.
STEP 2: MIX THE INGREDIENTS
Chop the chicken in a mincer, then place it in a bowl and mix it with: boiled vegetables, onion, egg, breadcrumbs, Parmesan cheese, salt and pepper.
STEP 3: SHAPE THE NUGGETS
With wet hands, take a teaspoon of mixture and give it a round shape. Then deep then into breadcrumbs.
STEP 4: COOK
Brush a baking papaer sheet with some oil, then put nuggets on it. Sprinkle with some more oil and cook in preheated oven at 200°C for 20 minutes.
