Yesterday when I came back home I was thinking about what to cook for dinner… So I opened the fridge and I just got inspired: a delicious ham and zucchini pie!
SERVES 4 PEOPLE

INGREDIENTS
3 tablespoons extra virgin olive oil
1 teaspoon onion, chopped
2 zucchini
Salt to taste
1 cup Ricotta cheese
2 tablespoon Parmesan cheese
1 egg
4 slices ham
Salt to taste
Shortcrustpastry (here my recipe)
All purpose flour to taste (for the pastry board)
3 tablespoons water+ 2 tablespoons oil
STEP 1: COOK THE ZUCCHINI
Cut zucchini into small cubes. Place oil and onion in a pan and let cook for 1 minute (until golden). Add cubed zucchini and salt and cook for 8-10 minutes.
STEP 2: MAKE THE FILLING
Place cooked zucchini, Ricotta and Parmesan cheese, egg, ham and salt in a bowl and mix.
STEP 3: ROLL OUT THE DOUGH
On a pastry board cut the shortcrust dough into two pieces. Roll out each piece 1 cm thin using a rolling pin.
STEP 4: FILL THE PIE
Place one shortcrust sheet in a baking tin (on a parchment paper sheet), then add the filling.
STEP 5: COMPLETE THE PIE
Cut the second shortcrust sheet into stripes and place them on the filling . Now brush them with water+oil mixture.
STEP 6: COOK
Cook the pie in preheated oven at 200°C for 40 minutes.
