Apricot and vanilla pie

MAKES 1 CAKE

INGREDIENTS

5 oz milk

1 teaspoon vanilla extract

1 egg yolk

2 tablespoons sugar

1 teaspoon corn starch

 

 

9 oz all-purpose flour

4 1/2 oz butter (cold)

1 pinch salt

4 oz confectioner’s sugar

1 egg (beaten)

vanilla extract to taste

 

All-purpose flour to taste

 

2-3 apricots

 

 

 STEP 1: MAKE VANILLA CREAM

Warm the milk and add vanilla extract.

In the meantime beat egg yolk and sugar, then add milk and corn starch. Place the mixture on heat and let it thicken.

 

STEP 2: MAKE THE CRUST

Put the flour, salt, butter in a mixer and mix. Now add sugar, egg and vanilla extract. Transfer the mixture on the pastry board and  knead it by hand but quickly, so that the dough doesn’t get greasy. Wrap the dough in clingfilm and put it into the fridge for 1/2 hour.

 

STEP 3: ROLL OUT

Remove the dough from the fridge, divide it into two pieces and roll them out using a rolling pin. Now place one of them in a cake tin covered with baking paper.

 

STEP 4: FILL THE PIE

Place vanilla cream (prepared on step 1) on the pastry sheet and add sliced aprictos.

 

STEP 5: DECORE

Cut the second pastry sheet into strips and place them on the filled one.

 

STEP 6: COOK

Cook the pie in preheated oven at 180°C for ab.40 minutes.
