Grilled zucchini Parmigiana (light!)

The ideal recipe for those who want to keep fit but want to eat something delicious at the same time! Here is my magic formula for a and healthy meal. It’s a variation of clasical Parmigiana, made with grilled zucchini instead of fried aubergine 😉

 

SERVES 4 PEOPLE
READY IN 30′

 

INGREDIENTS

7-8 zucchini

 

2-3 tomato sauce cups (here the recipe)

8-10 slices ham

3 mozzarella

1 cup Parmesan cheese

 

 

STEP 1: GRILL THE ZUCCHINI

Slice zucchini and put them an a hot George Foreman grill for a minute.

 

STEP 2: PLACE INGREDIENTS IN THE BAKING TIN

Spread two tablespoons of tomato sauce into the baking tin, then cover with grilled zucchini, then with ham and  mozzarella slices. Add a ladle tomato sauce and some Parmesan cheese. Do the same with the remaingin ingredients to get Parmigiana layers (zucchini, then ham, then mozzarella, then tomato sauce and finally Parmesan cheese).

 

STEP 3: COOK

Cook Parmigiana in preheated oven at 180°C for 20 minutes.
