Buridda – Italian stockfish soup

If you love “baccalà alla vicentina” , “buridda” is a must too! It’s a kind of fishsoup made of stockfish and other ingredients. It’s very strong and particular flavor, wanna try?

 

SERVES 4 PEOPLE
READY IN 55’

 

INGREDIENTS

25 oz stockfish ( already soaked)

All- purpose flour to taste

3 tablespoons extra virgin olive oil

1 tablespoon butter

1 tablespoon onion, chopped

 

2 anchovy fillets

1 tablespoon capers

2 tablespoons black olives

½ glass white wine, dry

 

2 potatoes, cubed

2 cups hot water

1 teaspoon tomato paste

Fresh parsley, chopped to taste

 

 

STEP 1: SAUTè FISH

Wash and dry the stockfish with kitchen paper. Sprinkle with all-purpose flour and let it sautè in a non-stick pan with oil, butter and onion. L

 

STEP 2: ADD THE OTHER INGREDIENTS

Add the anchovies, capers and olives. Mix and simmer with white wine until reduced (it takes a couple of minutes).

 

STEP 3: COOK

Add potatoes, hot water and tomato paste ( make sure to dissolve it into the pan) and let cook for about 45 minutes. 1 minute before switching the heat off add fresh parsley.
