Do you love cherry tomatoes too? If the answer is yes you should try this delicious recipe for a soft and tasty tomato tatin.
An ideal snack for brunch, but also a quick appetizer for family’s Sundays and holidays. I like adding some cheese for a great flavor, but if you prefer you can also add anchovies, cappers or olives.

INGREDIENTS
Ab. 20 cherry tomatoes
Salt and sugar to taste
2 tablespoons extra virgin olive oil
Oregano to taste
1 focaccia dough (I used Stuffer)
2 tablespoons Grana cheese
Water to taste
Grana cheese to taste
STEP 1: SEASON CHERRY TOMATOES
Cut cherry tomatoes in a half, place them in a bowl and season with salt, sugar oil and oregano.
STEP 2: COOK CHERRY TOMATOES
Place cherry tomatoes on a parchment paper sheet and cook them in preheated oven at 200°C for 20 minutes.
STEP 3:ROLL THE DOUGH
Roll the perimeter of the dough to get a circle as big as the baking tin where you cooked cherry tomatoes.
STEP 4: PLACE INTO BAKING TIN
Sprinkle cherry tomatoes with Grana cheese, then cover them with the focaccia dough and press well with your fingers.
STEP 5: COOK
Brush the dough with water, then cook it in preheated oven at 200°C for 15-18 minutes.
STEP 6: TURN OVER
Turn over the focaccia and place it in a serving plate. If you like you can add more Grana cheese!
