I usally prefer savouries than sweets, but if you’ask me what kind of sweet I could take with me on a desert island this will the answer!

INGREDIENTS
2 cups all-purpose flour
1/2 cup butter (cold)
1 pinch salt
1 cup confectioner’s sugar
1 egg (beaten)
1 teaspoon vanilla extract
½ cup butter
½ cup sugar
1 egg
2 tablespoons almond-flour
1 tablespoon all-purpose flour
Butter and all-purpose flour to taste
2 tablespoons apricot jam
1 can apricot in syrup
Almonds to taste
STEP 1: MAKE THE DOUGH
Put the flour, salt, butter in a mixer and mix. Now add sugar, egg and vanilla extract. Transfer the mixture on the pastry board and knead it by hand but quickly, so that the dough doesn’t get greasy.
Wrap the dough in clingfilm and put it into the fridge for 1/2 hour.
STEP 2: MAKE THE FILLING
In a bowl beat butter and sugar, then add the egg and – little by little – almond and all-purpose flour.
STEP 3: ROLL OUT THE DOUGH
Remove the dough from the fridge and place it on a lightly flore pastry board. Roll the dough out to get a 1,5 cm thin sheet and place i tinto a baking tin (previously greased and floured).
Press well with fingers.
STEP 4: FILL THE PIE
Cover the crust with jam and then with the filling prepared on step 3. Now deep the apricots into the filling and sprinkle with sliced almonds.
STEP 5:COOK
Cook the pie in preheated oven at 180°C for 45 minutes.
