Fresh cheese, asparagus and bacon pizza

Spring sun = asparagus

As you known I really love asparagus so I decided to make a crunchy version of pizza filled with creamy fresh cheese, mozzarella, delicious asparagus and irresistible bacon!  A perfect combination for an easy lunch or brunch.

 

SERVES 2 PEOPLE
READY IN 40’

 

INGREDIENTS

7-8 asparagus

water and coarse salt to taste

 

4-5 bacon slices, cubed

 

1 pizza dough (io udes Stuffer)

Oil to taste

 

½ mozzarella

2 tablespoons fresh cheese (io used Stuffer)

1-2 tablespoons Parmesan cheese

 

Extra virgin olive oil to taste

 

 

STEP 1: BOIL THE ASPARAGUS

Peel the bottom of the asparagus, then cook them in boiling salted water for 10-12 minutes. Drain them.

 

STEP 2: BROWN BACON CUBES

Place bacon cubes in a non-stick pan and cook until they change color (about 3-4 minutes). Then add sliced asparagus and cook for 2 more minutes.

 

STEP 3: SLICE THE PIZZA DOUGH

Slice about 8-10 pizza strings and save them.

Wrinkle (I don’t know if this is the ideal word, let’s hope so! :-)) the contour of the remaining pizza dough (now squared)  and brush it with oil. S

 

 

STEP 4: FILL

Fill the pizza with mozzarella cubes and fresh cheese.

Add asparagus and bacon and sprinkle with Parmesan.

 

STEP 5: CLOSE

Close the pizza square placing the strips prepared on step 3 like a grill. Season with a little oil.

 

STEP 6:COOK

Cook pizza in preheated oven at 220°C for 15-18 minutes.
