As you know I am not a no-butter cakes lover, but recently I’ve found myself forced to a dramatic diet (a lighter one) because of some health problems.
So I dediced to take a look at new sweet recipes in order not to give up my usual breakfast cake…
The apple pie recipe without butter (this is a revisitation of that of chiarapassion one) is a very valid alternative to the traditional cake because preserves its best features: the fragrant aroma, the softness and the pleasure of a slightly wet cake.
I’ve made my very personal changes to the original recipe (the proportions and the ingredients too) adding my personal touch!
This time it went well, the result is a gluttony. If this is my new diet I think I won’t have problems going on it!
SERVES 5-6 PEOPLE

INGREDIENTS
1 apple
2 tablespoons lemon juice
3 eggs
3,5 oz seed oil
2,5 oz white yogurt
5,5 oz sugar
7,5 oz flour 00 + 1 tablespoon baking powder
Butter and flour to taste
3 tablespoons chopped hazelnuts
STEP 1: SLICE THE APPLE
Peel the apple and slice it, then place it in a bowl and sprinkle it with lemon juice. Keep aside.
STEP 2: BLEND THE EGGS
Using an immersion blender, blend the eggs with the oil for a couple of minutes, then add the yogurt and continue whisking for another minute.
STEP 3: MAKE THE MIX
Place the whisked egg mixture into a bowl and gradually add the flour + baking powder and the sugar, whipping with the whisk.
STEP 4: PUT IN THE CAKE PAN
Butter and flour the cake pan, then pour the mixture into it.
Now take the slices of apple and lay them on the cake making them sink into the dough for half their height.
Sprinkle the cake with the chopped hazelnuts.
STEP 5: COOK
Bake the cake in a preheated oven at 180 ° C for 55 minutes.
TIP: if you don’t have the chopped hazelnuts you can easily prepare them at home; you just have to shell some hazelnuts, put them in a non-stick pan and cook for a couple of minutes (it’ll be it easier to remove the skin); Finally chop them with a knife or with a meat mallet.
