Leftover broccoli and 15 minutes?
Here is my smart idea to use them to cook a creamy pasta, beloved by adults and children.
Very easy and ready in a minute, this recipe will be your secret to make you guests say “wow”.
SERVES 4 PEOPLE
READY IN 15’
INGREDIENTS
water and coarse salt to taste
1 lb penne pasta
1 tablespoon extra virgin olive oil
1 clove garlic (optional)
2 tablespoons breadcrumbs
Leftover broccoli to taste
2-3 tablespoons fresh cheese
1 tablespoon Parmesan cheese
STEP 1: COOK PASTA
In boiling salted water (the correct ratio provides 1 liter of water per pound of pasta and 12 g of salt per liter of water), cook penne pasta (read on the package the cooking time).
STEP 2: BROWN THE BREADCRUMBS
Meanwhile, pour the oil in a non-stick pan, add the breadcrumbs and cook until the bread gets brown (it takes just two minutes). If you like it you can also add more taste adding a clove of garlic.
STEP 3: SEASON
Drain pasta and place it into the pan with broccoli. Add frsh cheese, Parmesan and mix.
Finally sprinkle with breadcrumbs!
