In Italy we call them “cavolini “ or “cavoletti”, but the result is the same! Today we’re having these goodnesses rich in vitamin C and beta-carotene.
Celebration time is over… , so let’s start the season with healthy and genuine products!
SERVES 4 PEOPLE

INGREDIENTS:
7 oz Brussels sprouts
Water and coarse salt to taste
1 tablespoon extra virgin olive oil
1 teaspoon chopped onion
2,5 oz Guanciale (a kind of Italian bacon)
Salt and pepper to taste
1 tablespoon sliced almonds
STEP 1: BOIL THE SPROUTS
Remove the outer leaves and the stem from the sprouts, make a cross-shaped incision on the bottom, then boil them in salted water for about 10 minutes.
STEP 2: BROWN THE GUANCIALE
In the meantime, cut the bacon into strips.
Brown it in a non-stick pan with oil and onion for a couple of minutes.
STEP 3: ADD THE SPROUTS
Add the drained sprouts to the bacon pan, season with salt and pepper and cook for 5 minutes.
STEP 4: COOK THE ALMONDS
Place the almonds in a non.stick pan and brown them for 30 seconds.
Finally add the almonds on the sprouts pan and and serve.
