By dint of hearing that pumpkin is sweet, finally I bake a sweet pan brioche with it!
The recipe is the right one for breakfast. The slices of this soft panbrioche bread, natural or lightly toasted according to your taste, are ideal in the morning both with honey or with chocolate cream.

MAKES 1 BREADLOAF
READY IN 4h 50’
INGREDIENTS:
1/2 cube of brewer’s yeast + 1 tablespoon of water
3,5 oz sugar
1,5 oz butter at room temperature
2 eggs
6,5 cooked pumpkin purèe
14 oz Manitoba flour
2 tablespoons cocoa + 2 tablespoons warm milk
1 tablespoon flour
1 tbsp sugar
1 oz butter
brown sugar to taste
STEP 1: MAKE THE MIXTURE
Place water + yeast and sugar in a bowl and stir with a fork until completely dissolved.
Gradually combine butter, eggs, pumpkin and finally flour while continuing kneading (you can do it either by hand or using a mixer).
You’ll get a ball (it’s pretty sticky I know!).
STEP 2: CREATE TWO FLAVORS
Separately, dissolve cocoa powder in milk.
Now divide the dough into two bowls. Add the mix of milk and cocoa, the spoonful of flour and sugar to one of them and knead to mix the ingredients.
Transfer the two doughs into two lightly floured bowls, covered with plastic wrap and let rise for a couple of hours at room temperature.
STEP 3: ROLL OUT THE DOUGH
Sprinkle a parchment paper sheet with flour. Place the pumpkin dough on in and roll it out with a rolling pin.
Do the same with the cocoa one.
Overlap the two doughs and roll them on themselves (I’m not sure ab. the translation but please take a look at the picture below!).
Transfer the roll in a baking sheet lined with parchment paper.
STEP 4: SECOND LEAVING
In a saucepan melt the butter and use it to brush the surface of the panbrioche.
Sprinkle with brown sugar, make surface cuts and let rise for another couple of hours at room temperature.
STEP 5: COOK
Bake the panbrioche in preheated oven at 180 ° c for about 35-40 minutes checking that it does not darken too much.
A PIECE OF ADVICE: if you prefer that the panbrioche maintains a more regular shape, don’t cut the surface!
