“Caprese” cake – Hazelnut version

I know the original one is strictly with almonds, but if you have a stock of hazelnuts at home, wouldn’t you try a new version?

And so it was.

Simply wonderful, Caprese – in all its variations – never disappoints.

 

SERVES 6 PEOPLE
READY IN 1h 10’

 

INGREDIENTS:

1, 5 dark chocolate bars

 

4 eggs

 

4 1/2 oz butter
4 oz sugar

1 tablespoon potato starch
4 oz hazelnuts (finely chopped)
1 tablespoon cocoa powder
½ teaspoon baking powder

 

butter and all-purpose flour to taste

 

hazelnuts and confectioner’s sugar to taste

 

 

STEP 1: MELT THE CHOCOLATE

Broke the chocolate and melt in a water bath.

 

STEP 2: BEAT THE EGG WHITES

In a bowl divide the whites frome the yolks and beat the whites until stiff.

 

STEP 3: COMBINE THE INGREDIENTS

In  a new bowl beat butter with the yolks (one at time).

 

Add , little by little, melted chocolate, sugar, potato starch, chopped hazelnuts, cocoa and baking powder.

Finally add beaten whites prepared on step 2.

 

 

STEP 4: COOK

Brush a cake tin with butter and sprinkle with flour.

place the cake mixture in it and cook in preheated oven at 170°C for about 45 minuti (check the cooking time with a toothpick!).
