MAKES AB. 10 PIECES

INGREDIENTS:
10,5 oz lukewarm water
1 teaspoon sugar
0,3 oz fresh brewer’s yeast
3 pinches salt
14,5 oz all-purpose flour
salt to taste
extra virgin olive oil
½ glass water + oil + salt mixture
STEP 1: DISSOLVE THE YEAST
Place water in a bowl, add sugar and yeast and mix with a fork to dissolve them.
STEP 2: ADD FLOUR
Combine salt and flour, then add it – little by little- to the bowl.
Mix with a spatula (you’ll get a wet and sticky dough) .
STEP 3: LEAVENING
Cover the bowl with clingfilm and rest the dough at room temperature for a couple of hours.
STEP 4: SHAPE SMALL FOCACCIA
Soak a parchment paper sheet in water, then wring out and place it on a baking tin.
With a wet spoon divide the dough in about 10 pieces and place them on wet parchement paper.
Press with finger to get the small focaccia a round shape and to make holes.
Sprinkle with salt and sprinkle with oil.
STEP 5: SECOND LEAVENING
Place the baking tin into off oven and rest for about 30 minutes.
STEP 6: COOK
Cook small focaccia in preheated oven at 220°C for about 20 minutes.
When cooked and still hot, brush them with water + oil + salt mixture.
