Cauliflower cutlets

No, this isn’t the French cordon bleu.. even if it looks like it!

These golden cutlets have a secret that I’m immediately revealing you because I don’t believe in food secrets! 

They’re made of cauliflower instead of meat! A delicious idea to make children eat healthy vegetable in an original way! Must try!

 

MAKES 5-6 PIECES
READY IN 50’

 

INGREDIENTS:

1 cauliflower

 

1 egg

3 spoons of Parmigiano

3 tablespoons breadcrumbs

Salt and pepper to taste

 

1 cup flour

1 egg + 1 pinch salt

1 cup breadcrumbs

 

frying oil to taste

 

 

 

STEP 1: COOK THE CAULIFLOWER

Remove all the leaves from the cauliflower, wash it under water and slice it.

Steam it for 30 minutes (alternatively you can boil it in water, the result will be excellent as well!).).

 

STEP 2: MAKE THE MIXTURE

Place the drained cauliflower on absorbent paper.

Now put it in a bowl and mash with a fork

Add egg, Parmigiano, breadcrumbs and season with salt and pepper.

Mix.

 

STEP 3: SHAPE THE CUTLETS

With wet hands, take a ball of dough and give t the shape of a cutlet.

Do the same with the remaining mixture.

Rest the cutlets in the refrigerator for 15 minutes (this will make them easier to bread).

 

STEP 4: BREAD

Prepare three different bowls with: flour, beaten egg with a pinch of salt and breadcrumbs.

Remove the cutlets from the refrigerator and bread them, passing them first in the flour, then in the egg and finally in the breadcrumbs.

 

 

STEP 5: FRY

Cook the cutlets a couple of minutes on each side in hot oil and serve immediately.

Yummy!
