Come on confess: I know that you also have a frozen sprig of rosemary on your balcony 🙂
So, here’s a way to taste of all its scents in a soft Christmas-style focaccia!
It’s quick to make and is really tasty, especially if you use cereal flour 😉
SERVES 4-6 PEOPLE

INGREDIENTS:
17,6 oz multi-cereal flour
1 teaspoon brewer’s yeast, dry
3 tablespoons potato flakes (or 1 large potato, boiled and mashed)
10,5 oz lukewarm water
2 teaspoons salt
extra virgin olive oil to taste (for the baking sheet)
rosemary to taste
cherry tomatoes to taste
1/2 glass water + 1 tablespoon oil + pinch salt
STEP 1: MAKE THE DOUGH
Place in a bowl: flour, brewer’s yeast, potato flakes (or mashed potato) water and salt.
Knead by hand or using a kneading machine to get a sticky ball.
Cover the bowl with clingfilm and rest for a couple of hours.
STEP 2: PLACE INTO THE BAKING SHEET
Sprinkle the baking sheet with oil and spread the dough in it using your fingers.
Rest into oven (off) for 1 hour.
STEP 3: SEASON
Using rosemary draw a tree pressing the springs into the dough.
Add sliced cherry tomatoes to make the ormaments.
Carefully brush the surface with water + oil+ salt mixture.
STEP 4: COOK
Cook focaccia in preheated oven at 220°C for 25 minutes.
