So juicy: mussels in tomato sauce are a real delicacy!
They are very easy and quick to prepare, ideal for both lunch and dinner: every time you feel like eating!
In the recipe I’m explaining you the steps to clean them properly and bring all the goodness of the sea to the table.
SERVES 2-3 PEOPLE
READY IN 30′
INGREDIENTS:
17,5 oz mussels
2 tablespoons water
3 tablespoons extra virgin olive oil
1 teaspoon chopped onion
1 cherry tomatoes can
Salt to taste
3-4 basil leaves
Parsley to decore
Cherry tomatoes to decore
STEP 1: CLEAN THE MUSSELS
Remove broken or open mussels.
Wash the closed ones under cold water, then debear and scrub them. Finally rinse them.
Place two tablespoons of water in a pot, add mussels and cover with the lid. Cook on high heat until they open.
As they open, take the mussels away from the pot draining them from the cooking water.
STEP 2:FILTER THE MUSSELS WATER
Place a sterile gauze inside a colander and filter the mussels water left in the pan (in this way you will treat the sand).
STEP 3: COOK THE SAUCE
Brown onion in oil in a non-stick pan just for 1 minute.
Add cherry tomatoes, a pinch of salt and basil cut into strips.
Mix carefully and continue cooking with a lid for 10 more minutes.
STEP 4: ADD THE MUSSELS
Add mussels water to the sauce pan.
Now add mussels,
cook 1 more minute and it’s ready!
