Ham-stuffed baby peppers

My Carnival preparations have started! I have so much desire for bright colors so the last time I went to the neighborhood greengrocer I was so happy to find them: baby peppers!!

    They can be eaten raw or cooked and stuffed in a thousand different ways … I chose a filling that we like so much maybe because of its simplicity: ham and Parmigiano.

    Stuffed baby peppers are easy to make and very comfortable because they cook in the oven 😉

INGREDIENTS:

3 slices bread

7 oz ham

2,4 oz Parmigiano cheese

½ glass milk

1 egg

Salt pepper to taste

 

30 baby peppers

 

1 tablespoon extra virgin olive oil

 

3 tablespoons breadcrumbs

1 tablespoon parsley, chopped

Salt to taste

Extra virgin olive oil to taste

 

 

 

STEP 1: MAKE THE FILLING

Put the bread slices in the blender and blend

Add ham, Parmigiano and milk.

Blend to get a homogeneous mixture.

Transfer it to a bowl and add egg, pepper and just a pinch of salt.

Mix.

 

 

STEP 2: SLICE THE PEPPERS

Wash the peppers

Cut off the top to create the lid, then remove the seeds and white internal parts with a knife.

 

 

STEP 3: FILL THE PEPPERS

Place oil in a baking tin

Fill each baby pepper

and close it.

Sprinkle with breadcrumbs, parsley, salt and oil.

 

 

STEP 4: COOK

Bake in preheated oven at 200°C for 30 minutes.
