They are literally known as “sand biscuits”, a masterpiece of French pastry. They are very crumbly bites that literally melt in your mouth!
They are prepared in a few simple steps and are ideal for dipping in tea.
If I haven’t convinced you so far, maybe the fact that they were appreciated by George Sand, an unforgettable French writer of the 19th century will do.

INGREDIENTS:
6 oz flour
3,5 oz butter
1 pinch salt
Lemon peel to taste
Vanilla extract to taste
2,4 oz powdered sugar
1 oz egg yolk
2 tablespoons sugar
STEP 1: MAKE THE DOUGH
Place flour, butter, a pinch of salt, lemon peel and a few drops of vanilla extract in the bowl of the mixer.
Separately, mix together the egg yolk and icing sugar,
then add it to the mixture and mix the ingredients.
Transfer the dough to the pastry board and knead it quickly.
Divide it into two parts giving it the shape of two sausages approx. 25 cm.
Wrap with clingfilm and rest into the fridge for 30 min.
STEP 2: SLICE THE BISCUITS
Roll the dough in sugar,
and slice the biscuits ab. 1,5 – 2 cm.
STEP 3: COOK
Arrange the biscuits on a baking tray lined with parchment paper and cook for 15 minutes at 180°C.
